What's your simple food pleasure?

We all have them.  That simple combination of Farmer's Market ingredients that you whip up in minutes and makes you go "Mmmmm....." every time.  What are yours?

Mine:

-Plain yogurt with fresh fruit and honey.  I use ripe, seasonal fruit, starting with strawberries, then cherries, blueberries, peaches, pears and ending with apples.  I'm having yogurt, peaches, and a little drizzled honey right now.

-Tomato, mozarella, and basil sandwiches.  Layer tomato and sliced mozarella on a bauguette, and pop under the broiler for a few minutes until the cheese starts to melt.  Top with fresh basil and drizzle with balsamic vinegar.

  • YES!  Caprese is way up on my list.  We've got basil and tomatoes in our garden, and local mozzarella from the co-op up the street.  YUM!

    I'm also planning to make popsicles this weekend with some of our CSA fruit.  I adore popsicles.

  • Pico de gallo. I sometimes eat it with a spoon. Fresh diced tomatoes, jalapenos, onion, garlic, cilantro, lime, a little olive oil and salt and pepper. All but the last four I can get from the farmer's market or my garden.
  • Peach and arugula salad. I cannot get enough of this in the summer!

    ...the caprese is so much a favorite of mine that i've started whipping up bruschetta toppings with all the tomatoes and basil we've gotten.  ...then, i put a big bunch of it in a saucepan, add caramelized onions and some salt and spices and whatnot, and make fresh pasta sauce.

    that peach-arugula combination sounds ah-may-zing!  that may need to be my lunch today!

  • My simple food pleasure for this entire summer has been a mixture of chopped up local peaches with local blueberries. I have it as an afternoon snack almost every day.

    my current addiction is sauteed sugar snap peas cooked up with whatever spicy grill seasoning I have laying around. It's the perfect combo of sweet and savory. 

    I've got a boatload of veggies about to go on me, so tonight I'm whipping up kebabs with a little bit of everything: locally sourced steak cubes, green pepper from my garden, potatoes, farmers market onions, hot peppers, and carrots.

    Also, simple "gyros" with yogurt dill, mint, cucumber, onion, pepper and feta with a toasted pita is fabulous, or mixed up and used as a dressing on mixed greens.  Also good with fresh tomato.

  • My simple food pleasure for this entire summer has been local blueberries. I have snack almost every day. 
  • Fruit smoothies. Just take some of that fresh fruit, whatever I just happen to feel like that day, throw it in a blender with a little bit of milk and some apple juice (or fresh orange juice if I've got some), and some ice. Yummmm. Especially during these summer months, lol.

  • Sliced tomatoes with balsamic vinegar. 

    Fresh raspberries by the handful.

    Red pepper warm from the garden pureed with goat cheese...as a spread, on pasta, on rice, on other vegetables.
