I am making BBQ Chicken Pizza tonight...just store bought pizza crust, cheese, chicken, and BBQ sauce. To accompany my fancy pizza we are having a salad.
Anyone have any good recipes to share?

I am making a jerk rub and making grilled jerk chicken, coconut rice, and grilled asparagus. The jerk rub and coconut rice are from the cookbook Caribbean Light.
Jerk Rub:
1tbsp onion powder, 1.5tsp ground allspice, 1tsp ground thyme, 1/2tsp ground ginger, 1/2tsp cinnamon, 1/2 tsp cayenne pepper, 1/4 tsp ground nutmeg, 1/4 tsp ground garlic powder, and 1/4 tsp salt. Mix all the spices together and use as a dry rub on pork or chicken:)
Coconut Rice:
1cup water, 1 cup lite coconut milk, pinch of saffron, 1cup uncooked long grain rice, 2tbsp minced scallion, 1 clove garlic minced, 1/4 tsp salt. Combine water, coconut milk, and saffron in saucepan and bring to a boil, add rice and bring to a boil again then reduce heat to med-low and simmer for 15-20 minutes or until liquid is dissolved and rice is tender. Stir in scallion, garlic, and salt and serve.

I'm having left overs of my crock pot chicken burritos.
chicken breasts with tomatoes, onion, limes and lemon juice, salsa, and garlic. let cook for a few hours and then shred it.
brown rice with salsa in another crock pot, have the salsa enough liquid so that the rice cooks in it. let cook for 2 hours.
whole wheat tortillas with diced tomatoes, cheese, sour cream, and anything else your heart desires
optional: drinking a marg with it.

Call me a bad wife, but we are having Pizza Hut!
We cooked a bunch of Chinese dishes together on Sunday which turned out to be ton of work, and last night we had salads with grilled steak (for me) and chicken (for the hubs) - we are kind of salad addicts.
Don't get me wrong, my salad dressing I make is awful in terms of fat, but it's so good. If any of you are into blue cheese and steak salads, this is an excellent salad dressing:
1/3 cup olive oil
Diced Garlic to your tasting
1/2 cup blue cheese
2 TBS. red wine vinegar
1 TBS. lemon juice
1 Dash of Worcestire Sauce
Salt/Pepper to your taste..
It is to die for....
But, since we both work and have an hour commute each way, we get lax on the cooking during the week. Bring on the pizza!!
Totally saving this, it sounds fantastic and I LOVE blue cheese.
I picked up a whole bunch of fresh seasonings from the amish market when I was in TN a few weeks ago. One of them was lemon pepper so I marinaded some chicken earlier and hubby grilled it. I've never had lemon pepper chicken before last week, and it is to die for. So good. I made white cheddar mac and cheese from a box with it. Totally lazy and unhealthy but I was beat tonight.
