I click on a link to sign up and it tells me to sign up through Facebook, and that it wants access to a bunch of my FB info.  Is that the only way to sign up?  What am I missing?

Yes, it wants to access the standard things everything that links through Facebook does.  That's how it helps you find friends and it will let you post to your profile.  Once you finish setup, you can remove the profile picture and change your name to keep things more private.  I haven't had any issues with security.

I can't find where you sign up without going through FB.  oh well, I'll just go through FB I guess.
