any good crock pot recipes?

I never use my crock pot, but I'd really like to start using it more!  Does anybody have any good recipes?  I would love a chicken one to make today.  The only thing I ever make it like pulled bar-b-q chicken, so something different would be nice.

  • I have one.. I LOVE my crockpot....

    chicken tortilla soup... 

    Boneless Skinless Chicken Breast or Tenders, I use frozen or fresh, carton of low sodium chicken broth, can of rotel tomatoes, can of corn and any extra spices you want to add.. I cook it on low for about 4 hours, then it turns over to warm automatically. When I get home, I take a fork and shred the chicken and add a can of fat-free refried beans. The beans make it thick so you can add 2 cans if you are making a big batch of soup. You can more corn or tomatoes or whatever... It's an easy recipe and I freeze the left overs.

  • Pulled chicken sandwiches.  They are delicious and get better as leftovers I think!

  • Yeah... apparently I didn't read your whole post....

    I also make chili in the crockpot.  I take four cans of crushed tomatoes with green chilis.  I blend three cans and keep one whole because I don't love giant chunks of tomatoes.  Then I add four cans of kidney bean (two light and two dark), juices and all.  I then add a pound of cooked ground beef that I cooked with onions to the mix.  Lastly, I add a chili packet from the grocery store (you could probably use your own blend, I just find the packet easier) and simmer away on low.  Since everything is already cooked you are just heating it all through.  Plus the longer it cooks, the thicker it gets.  I'll post others as I think of the them :).  I love my crockpot.

    Mix one packet of lipton onion soup mix into one 16 oz. carton of sourcream. Dump into crock pot and add one large can of cream of mushroom soup. Mix in a can of mushrooms (any size, depending on how many you like)... Add 1 lb of chicken breast (or breast tenders) to the crock pot... Cook on low for 4 hours.. Serve over cooked egg noodles..
