Good home alone recipes??

FI travels a lot for work so I often find myself home by myself for a few nights - a few weeks at a time. 

This time he's traveling to WV to see his brother, so it's not for work, but like I said, I'm used to this :)

I just got back from the store and spent about $15 on stuff to make mexican ziti tonight and that will last me for lunch and dinner until he gets back.

What's a good single dish meal or lots of leftovers meal that you make when you're home alone? I don't have it in me to cook for myself every night, but a one and done thing I can totally do!

  • I generally save leftovers for when DH is out of town. I also use the kashi frozen dinners as backup, the chicken florentine is delicious! I will also grill a single chicken chicken breast on the grill and slice it over a salad. I never go crazy when he is out of town:)

  • I'm bad and eat out when FI is gone :(  I try to do sushi just because it's a healthier option.  He may be going to OH for a month for training so I'll be needing these ideas, haha.

    Brea--Mexican Ziti?  That sounds a-mazing!

  • What I like to do is portion food and freeze it. I freeze chicken breasts individually and do small veggie portions. I also precook pasta and freeze it, them you just drop it hot water for literally 30 seconds and your done. This way I can take one portion out in the morning to thaw if I know he won't be home or I can pull 2 out for both of us. Then I do some quick cooks on meats and will do a little pasta with olive oil and veggies. I also love couscous since it takes about 5 minutes.

    This is what I usually do too! I was just feeling a little more domestic this week. That, and when we end up in this house I'm going to be using the beautiful kitchen to its full extent! 

  • My alone food was always mac & cheese and most of the time it was from a box.  That was when I was with my ex tho.  I think in the past year that I have lived with FI, we have only ate dinner apart about 5 times, if that.

  • Stir frys are also a great Option. Again just pre portion tjings and you can pull out what items you want to mix. I always have some prepared sauces on hand to use. I buy the 5 minute brown rice so normally I'll use it. Pre portioning takes a lil more te but I usually will just do it on a Sunday and make enough for several weeks. I eat alone a lot so I've found easy fixes lol
