jalapeno storage?

my jalapeno plant has quite a few peppers! I don't know what to do with them. I read up a little about freezing and pickling. has anyone done either of these? TIA!

  • I haven't frozen jalepenos, but have frozen lots of other fresh produce.  You can blanch them first, but i wouldn't think it would be necessary with peppers.  Then spread them out on a cookie sheet and stick in the freezer.  Once frozen, transfer to a container and keep in the freezer.

    This is exactly what I am doing today.  :-)  I'm not blanching mine though.

  • I pickle mine in brine with garlic and onion, because only DH eats them and he doesn't like vinegar pickling.

  • I have the same problem - too many peppers.  How long will they last if I just pick them and put them in the refrigerator?  Only so many batches of spicy salsa can be made!

  • I have frozen them whole with no blanching. It works fine, but the pepper does get soft after thawing so the jalapenos work great if you want to use them in a dish. I have also made jalapeno salsa that was really good. I have used them for sweet and spicy pickles. All options worked great.
  • You can easily freeze peppers (spicy or sweet), no blanching required.  Just cut in half, remove all the seeds and white pith, and freeze.  Remember to remove all the inside white parts, they turn bitter when frozen.  The peppers do get soft when you thaw them, so I've found it's best not the thaw them Smile Cut while frozen, and add to a stir-fry and cook for just 2-3 minutes until heated through.  They're much crisper that way than if you thaw them in the fridge and then cook with them.

    When picked fresh off the plant, my peppers keep in the fridge for about ~10 days.

  • All peppers can be successfully frozen. With hot peppers I cut them up first so i can use a little at a time if they're really hot. I've also pickled them. So easy.

    Weird but true: I did my MS thesis on the storage of chile peppers, including green and red jalapenos. They will both store at 7C (normal refrigerator temp) for 12 days without injury
