Your frozen wedding cake.

Our one year anniversary is Sunday (I still can't believe it!) and we have our cake top in our freezer. How long in advance did you take yours out to thaw? Ours is like a huge white brick!

  • We put ours in the fridge two days before our anniversary then on the counter the day before to thaw to room temp. It was delicious!
  • I don't remember, but I do remember that it was gross.
  • We thawed ours in the fridge for about 5 days... It was SOOOO good too (which suprised me since it was stuck in the freezer, just in the box from the bakery.  No wrap, no nothing.  Just a box....    Weird how great it was...

  • We froze ours and ate it a month after we got married. We didn't want to chance it being gross 1 yr later.

    I froze dh's bday cake (same way I froze our wedding cake) and we had that about a month later and it was gross! The cake came from the same bakery and the cake and filling was the same.

    Im glad we didn't wait 1 yr!

  • Congratulations! We celebrated ours this month, too. We took out our cake the morning of and left it out on the counter. The frosting was still good, but the cake just tasted stale.

  • I think we defrosted it a day or so beforehand and it was very gross when we took a tiny bite!! 
  • We defrosted ours in the fridge over 2-3 days. My grandmother took care of freezing it, so I can't take credit, but it was still delish after 1 year! We even kept it after it was defrosted for about a week and it was tasty right to the end. Granted our cake was very simple: buttercream frosting and yellow cake, no fancy fillings, but it tasted great. Maybe slightly dry, but for year-old cake, it exceeded our expectations.

  • I'm so late to this but Happy Anniversary!!  Our 1-year was over 4 years ago so sadly, I can't remember what our process was.  What I do remember is that it was soggy and drippy.  We were a little disappointed.  I think the mistake we made was leaving it out on the counter to defrost rather than putting it in the fridge ... I think.  I can't remember.  Oh well.  But I hope yours was good!!  =)
