Does anyone have good balckberry recipes??
The girls and I just spent the last hour picking all we could from our over grown blackberry bushes ( I have the purple hands and thorn pricks to boot), and other than our usual jam was looking for something different to do this year. Any ideas??

Looooooove blackberries! We just started picking a few days ago on our road. Yum! I love to make a blackberry buckle, such as this one:

A few weeks ago, I made a delicious raspberry crisp from PW's blog. It was awesome and I plan on making a blackberry crisp using this recipe.

What's funny is back in May or June we had a post about things you are looking forward to for summer and one of my things was finding new recipes for all the blackberries we'll pick. I feel like I recall meganmarie suggesting some sort of blackberry cocktail or mocktail....must go find that!!

Blackberry Cobbler Waffles:
(Makes 4 Belgian Waffles)
1 1/2 cup flour
1/3 cup rolled oats
2 tsp baking powder
1/3 cup brown sugar
1/4 tsp salt
1 tsp cinnamon
Combine the above in a bowl.
In another bowl, combine:
2 eggs
1 tsp vanilla
1 1/3 cup milk
1/4 cup melted butter, unsalted
Add wet ingredients to dry.
2 pints blackberries - 1 cup reserved
Fold into batter 1 cup blackberries. Bake according to waffle iron directions.
Meanwhile, heat remaining blackberries until they become saucy. Serve on top of warm waffles with creme fraiche or whipped cream.
These are also great with strawberries - I leave the berries out of the batter and just macerate sliced berries in a little sugar.
