cooks - macaroni salad?

Anyone have a great recipe for macaroni salad? Jane's daycare pot-luck end of Summer BBQ is next week and this what we were assigned. I don't eat it so I've never made it.

  • I'm not a cook by any means :) but this is an easy, go to macaroni salad that we actually eat as a meal. We cook 1/2 a box of elbow macaroni noodles, drain and add 2 cans of tuna, a stalk of celery finely chopped, a few spoonfuls of dill pickle relish, a squirt of mustard and mayo to taste....easy and delicious hot or cold.

  • Here are two of my favorite pasta salads.  I usually use fettuccine in the corn one, but you can use macaroni instead.

  • My fave go-to easy pasta salad recipe:

    1 pkg tri-color rotini

    1 bottle lite italian dressing

    pint cherry tomatoes, cut in half

    1/2 can black olives, sliced

    1 colored bell pepper, chopped

    1/2 lb salami (from the deli), cut into small cubes

    2/3 block of cheese (any kind - cheddar, cojack, etc), cut into small cubes

    Cook the pasta, drain and cool it. Add all the goodies and half the bottle of italian dressing. Let that sit for at least 4 hours. Before serving, add in the rest of the dressing and toss. Do this because the first half of the bottle will soak into the salad/noodles and the addition of the dressing at the end will make everything nice and moist again :-)

    Feel free to alter the proportions of goodies to your liking. I love black olives, so I always add extra of those!

  • I do basically the same as KatieK, but I add a small can of tomato sauce to the salad dressing.
