Super easy. Three or four boneless/skinless chicken breasts, jar of salsa, half block of cream cheese. Crockpot on low all day while you're at work. Last time I made it, we had it over just a little rice topped with shredded cheese.

I throw in a can of black beans and/or corn sometimes. You know, to keep things exciting.

  • I'm a crock pot idiot... Should the chick breasts be frozen or thawed? How big a can of salsa? And do you add corn beans when you get home, or from the start.

I now at least have one night planned. haha
