We?re serving up a 5 year old, Two 3 year olds, one 2 year
old and an infant for Brunch this weekend.
I?m thinking mimosas for the adults, blueberry coffee cake
for everyone and I?d like to do more of a tapas menu with fixings to serve all
pallets.
Suggestions?

Unless you have some extraordinary children, I'd plan on a lot of basics....pancakes, waffles, fruit, yogurt.
I've never known a 2 or 3 year old who will voluntarily eat scrambled eggs or anything much more "exotic" for breakfast/brunch.
Are you thinking more breakfast or more lunch or do you want a true mix of both?
For a true mix I'd probably go for some croissant and bagels in different flavors with a few kinds of cream cheese. Then I'd also do a mix of some cheese, cold cuts, lox, and jams. People can go sweet or savory, breakfast or lunchy.
A previous poster talked about deviled eggs for brunch. You could do some plain and some with bacon and/or lox.
Another thought is to bust out the griddle and do some silver dollar pancakes, crab cakes, and zucchini pancakes. Add some bacon and roasted potatoes.
I would definitely do a yogurt bar and fruit.
How many people are you having? I could have missed it due to the formatting...
Can you make a french toast bake or another one dish meal? How about bacon, some eggs, some bread products, fruit, yogurt and maybe some meat. Pancakes.
