I said one - but that assumes that i have something else to lay on. 99% of the time I have a chair or a big blanket at the beach/pool.
I'm not going to dry myself off with a sandy towel.

sometimes if all 3 of us are going, I might only bring 2 big towels and DH and I share w/ DD.

I'd like to know what prompted this question.
I am a 2 towel user, at both pool and beach. DH is like you, one towel per adult and towels for children are optional.
We also have different standards in terms of towel laundry, which I shall address ina follow-up poll.
I said two, but it depends upon the situation.
We have a huge beach towel-blanket that I used to lie on when we went to the beach last year. I had regular-sized beach towels for drying DD and I off when we went in the water (I spend more time in the water than on the sand). So I counted that as my "two" situation.
But if I'm going to a pool, I'm never just lying out in the sun. I'm either in the pool or sitting in a chair stuffing my face. If I'm doing neither of those, I'm inside where it's air conditioned.
