1Tbsp butter
1Tbsp brown sugar
1tsp cinnamon
1 apple, chopped (I used granny smith and only chopped half because it was a gigantor apple)
1/4c craisins (I just eyeballed)
thin-sliced baguette from Publix (they will cut it for you)
-preheat oven to 350. Cut brie wheel in half horizontally
-melt butter in small bowl and mix in brown sugar and cinnamon. Add apple and craisins, mix to coat
-In a cake pan or other bake-ware with an edge, spoon half of mixture over half of brie wheel. Cover with top of brie wheel and add remaining half of mixture
-Bake for 20min (I wasn't really watching. I just pulled it out when it was good and melty. I guess if I had pulled it out earlier it would have retained the shape better.)

Yeah, that's what I was going to suggest. I do mine w/brown sugar, nuts & jam on the top before I wrap it in a pastry. Your way sounds very yummy even if it is messy!
ETA: Do you have something along the lives of a small round corningware dish? You could bake it in that so it will just stay in a melty circle.
oooh the corning is a good idea. I think I might actually have one that would work, too. And then I could just put the little corning on a bigger platter with the bread.
