I have a JL meeting on Thursday after work that I need to bring an appetizer to. I don't want to have to re-heat anything when I get there because I may be short on time. I have a 1 hour commute from work to the location.
Any fun appetizer ideas that can be made the night before and served cold/room temp other than cheese?
And all you cheese lovers... don't go attacking me for not wanting to bring cheese... I love cheese and some sort of cheese tray/dip/spread is my go to. I'd just like to find something different too.

had these recently and they were delish...and i even hate tomatoes, but still thought they were yummy!!!
i made the ones she had, and they *were* super easy to make.
but maybe someone can suggest what to do so they will be good the next day?
i made mine about 6/630p and they were served right away. i took about 10 home, refrigerated them, and had them the next afternoon. while still tasty, the mozarella was a bit hard.
This black bean and corn salad would be great with chips, pita chips, etc. It can be made the night before, chilled all day, and should be ok in an hour commute to your meeting.
