Diabetic recipes

My grandpa and Zach's step-grandpa are both diabetic. Merrell (Zach's) is better at maintaining his diabetes than grandpa is, but he still derails on occasion. Grandpa, on the other hand, will eat himself to the point of throwing up, and he does it more often than not.

 That being said, I'd like to beat these two at their own game, and get some diabetic recipes to make for the holidays. With any luck, maybe it'll help grandpa stay in check, and give Merrell something more he can eat. Since he's the only diabetic in the family, and a married in at that, the kids and grandkids don't really cook anything special he can eat, so he misses out on a lot of desserts, and yams, what have you. I've got a couple recipes for desserts, but I'm looking for anything you've got.

  • Splenda can be subsituted in many recipes and not affect the taste...There are also some very good cookbooks published by them and by the Fix it and forget it people.  I am sure there are others but those come to mind.

  • My mom, and all her siblings are diabetic. So I'll ask her if she has any good christmas recipes. It may be hard, since my mom will just not eat the sweets and go with a healthier option.

    But I'll check and see what she's got.

  • So you post this yesterday and when mike got home he tells me about the health fair they had a work and pulls out a little cook book thing for people with diabetes and they have a yummy looking recipe for a cake called Peaches 'n' Cream I'm gonna get the stuff to make it this weekend/ coming up week and try it out to see if it's any good, if so I'll post the recipe.

  • And this is the email I got back from my mom:

    Any kind of meat or fish. Salad, veggies, stay away from carrots or peas high in sugar. sweet potato are good sauteed green beans with almonds and butter. Even what we have every year isn't a bad meal. it is the deserts that will kill you but the diabetics should know what they can have or can't. Some of the jello recipes are good or pudding. I may have some diabetic holiday cook books I'll look for them.

    To answer your mom's email, yes, diabetics should know what they shouldn't eat and stay away from them, but Grandpa doesn't. In fact, that's what he eats more of. Love him, but some days....
