App or Entree for 6qt slow cooker

Hi everyone! I lurk over here occasionally and you ladies always have such helpful tips and advice! We're having a large labor day bbq/housewarming for our friends and family on the Sunday of Labor day weekend. It'll be pretty casual, pseudo potluck styles, several friends will be bringing various munchies, we'll have lots of stuff to throw on the grill, etc. Is there an easy appetizer or entree that you can suggest I make in my 6 quart slow cooker? If it's a finger food and/or not too messy, that would be ideal.

  • You can't go wrong with lil' smokies and bbq sauce or meatballs! You could also do easy meatball sliders. Have the meatballs simmering in the slow cooker with some shredded cheese and rolls available.
  • Pulled pork/beef/chicken is always an easy crockpot main.  If you want something a little different you could do crockpot tacos- 4 chicken breast, 1 jar salsa, cook and shred.  Then have the taco fixings. 

    Apps other than a meat (meatballs, lil smokies, wings) are hard in that size of a crock pot unless you are doubling the recipe.

    This is a little different dip, but also really good.

    Artichoke- Zucchini Spread

    1 (14 oz) can artichoke hearts, drained and finely chopped
    1 small zucchini grated
    8 oz cream cheese
    1 cup sour cream
    1/4 cup parm
    1 green onion
    1 teas lemon juice
    1/4 teas cayenn

    Combine the ingredients and cook on low 2-3 hrs.  Serve with crackers, bread, pita chips.

     Again though you'll probably need to at least double for that size.

  • It's soooo overdone these days, but I keep making it because everyone keeps loving it - Buffalo Chicken Dip.

    I make it with Ranch instead of Blue cheese dressing, personal preference. 

    I also use light cream cheese, fat free ranch dressing, and 2% shredded cheese to cut some of the fat, and there's not much taste difference.  Frank's Red Hot sauce works great.
