Slow cooker meal for a crowd

My bible study is holding a progressive dinner where each couple has part of the meal at their house; appetizer at one persons, salad at another, main course, and dessert. I am in charge of the main course. Since it needs to be ready by the time we reach our house, what are some good slow cooker meal ideas that will please a crowd, feed about 15 people and are budget friendly?

  • This is a beautiful cherried pork roast.  I serve over noodles, but you can also do it over rice or mashed potatoes (you can put the potatoes in a crock pot to warm to). 

    2-2.5 lbs pork shoulder
    2 Table oil
    1 Table quick cook tapioca
    1 teas dried thyme
    1/2 teas pepper
    1 medium onion, sliced
    1 cup dried cherries
    1/2 cup apple juice or apple cider
    3-4 cups hot cooked rice or noodles

    In a large skillet brown meat on all sides in hot oil (frankly I skip this step)

    Transfer to cooker. Sprinkle tapioca, dried, thyme, and pepper.  Add onions and cherries.  Pour over apple juice.

    Cook on low 7-9 hrs or high 3-4.  Serve over rice/noodles/potatoes.  Serves 6-8. 

    For 15 people you may have a hard time using just one crockpot.  You may consider doing something that you don't need to watch in an oven.

  • These are fantastic and can make as much or as little as you want.

    These specific amounts will feed 4 to 6 but you can certainly increase based on how much your crock pot will hold...

  • We slow cooked a pork tenderloin in taco seasoning and had a taco buffet.  We shredded the pork once it was done cooking.  We set out tortilla, shredded cheese, lettuce, tomatoes, sour cream, guacamole, salsa, etc. You could even set out tortilla chips and salsa. 

    Another idea and easier, pulled pork sandwiches.  Cook a pork tenderloin in a can of cola in the slow cooker.  Sounds weird but it is so good.  When done cooking - remove pork, shred and add your favorite bbq sauce.  Serve on keiser rolls/potato roll with a side of coleslaw you can pick up at your local deli and dinner served.

  • Another thought might be to do a lasagna or other bakes pasta.
