A farmer's market vendor gave me a ton of basil on Saturday so I made pesto for the first time. Yummy! Anyway, it's a huge batch. How long will it keep?
I've had pesto in a jar that lasted a long time when refrigerated after opening. Will homemade last a comparable time?

Divide that up and put some in the freezer. It'll keep well.
I'm jealous of all the basil posts. Mine did poorly this year.

Here's what I do with extra pesto:
Scoop it into ice cube trays.
Pour a thin layer of EVOO over it all. (This will prevent it from discoloring in the freezer.)
Freeze.
Once frozen, pop the pesto cubes out, put them in a freezer bag, and store in the freezer.
Thaw and enjoy pesto cubes as needed.
I LOVE PESTO. Seriously it may be one of my favorite things in the world.
