For those of you who froze the top tier of your cake to eat on your first anniversary, how do you plan to thaw it? Will you do it slowly in the fridge, keep it wrapped as it is until it's thawed, sit it on the counter unwrapped? How many days do you think it takes to thaw? I went googlin' and found different suggestions, but was curious if anyone's baker told them how to do it to get the best outcome or if you've frozen cake before and thawed it successfully.
I just keep picturing unwrapping it and it all crumbling apart...eek

Re: Thawing your top tier
We didn't do our whole top, only pieces, but I figure I'll unthaw it in the fridge.

Along with our top tier, we were also given a ton of leftover cake that we froze and ate for about a month afterwards. DH just pulled out a section and put it on the counter for a little while and it thawed that way (and was delicious!). Of course, this was only after a few weeks and not a year in the freezer, but it thawed pretty quickly and didn't really fall apart too bad.
FYI-- not sure if different types of cakes will freeze different. Ours was traditional white cake with buttercream icing and lemon filling.

My MIL froze a few of our cakes after the wedding and brought them out of the deep freeze this past July. She thawed them out on the counter, and the cake pretty much fell apart, and the whipped cream fell off of them. but man did it taste amazing. I don't really care what it looks like, just that it's edible.

This, exactly. We only have one piece.
If it tastes icky (which I'm expecting it will) we'll each only have a bite anyhow. We've moved in the last year so the piece came out of the freezer, into a cooler (and it probably dethawed a little) and was then refrozen. I bet that's going to really help the flavor

We also didn't save our cake. I am planning on going to the bakery and getting a small version of what we did for our cake.
Anyways. I would say thawing it in the fridge would be best.

we saved a little slice of cake, so i think it'll only take the day to thaw out. we only used it to cut & smash anyway, other than that we had cupcakes.
we're going to go to the bakery and get a few cupcakes that were our flavors and enjoy them : )
