E starts school next week and will be gone or headed out the door as I'm heading in the door 3 nights of the week. I plan on doing some crockpot stuff but I need some ideas of things I can throw together in the mornings and he can heat up when he gets off work so he can have dinner before classes. I'm thinking on the nights that he is home I'll cook more than I normally do so that he has extra left overs for lunch and dinner.
So if you have any ideas that would be lovely! And any meatless/veggie recipes would be great!

I found some great recipes on Pinterest for breakfast "muffins". You mix together eggs with what ever you like in your omelettes. Pour into muffin tins and bake. I'm sending MH to work with a tray of them Friday.
I also saw some lassagna and other pasta dishes done in muffin tins.
You could also make up several chicken breasts and then use them in pasta, salads or other dishes through the week.

Meatloaf muffins are great for leftovers. They're the perfect size to stick between two pieces of bread to make a sandwich.
Soups are also easy to throw together and make lots of leftovers.
I do freezer cooking, and DH is starting to figure out how easy it is to grab a container from the freezer and have it for supper... Today is a cook day - I've got a bean soup in the crock pot (basically, buy the mixed dry bean bag, add water/broth, and whatever veggies you feel like). That's already in the crock pot, and after I get home from work, I'll be making up a pasta sauce and a beef and barley soup. They will all get containerized into individual servings, labelled, and will go into the freezer, ready for those nights when we're short on time or energy (or food in the fridge...).
They can then be warmed up to eat whenever we want. Cook some pasta (kept in pantry) add sauce. Warm up some soup, have it with a grilled cheese sandwich... Filling and healthy.
Bean/lentil soups/chilis would work well for meatless freezer meals. Pasta sauces don't need meat in them. I'd look at indian foods if you're going for meatless meals, too.
We also do a few meat-intensive options - chili, meat based pasta sauce, pulled pork, meat-based soups...
