Cooking this weekend? Try fried plantains! Easy and SO yummy!
(XP from What's cooking?) my dh and i love this easy recipe for fried plantains, so i thought i'd share:ingredients: 2 green (or greenish) plantains cut into approx. 3 inch segments; 2 egg whites; 2 tsp. olive oil; 1/2 tsp. saltdirections:~ bring water to boil and boil plantain segments uncovered on high heat for 15 minutes ~ drain plantains and transfer to bowl of cold water (i found that cutting up the cooled plantains into small pieces before putting them back in the bowl makes them much easier to mash later)~ when plantains are cool enough to handle, drain, peel, and return to bowl~ add salt and egg whites~ mash with potato masher until smooth or fairly smooth (mine are always lumpy and they still taste really good!)~ divide plantain mixture into equal portions (about 8), form into patties, and cook in large nonstick skillet (containing olive oil) for 5 minutes on each side. flip once at the start to evenly coat patties in oil. reduce heat if patties start to brown too quickly.my dh and i love this easy recipe for fried plantains, so i thought i'd share: YUM! ingredients: 2 green (or greenish) plantains cut into approx. 3 inch segments; 2 egg whites; 2 tsp. olive oil; 1/2 tsp. saltdirections:~ bring water to boil and boil plantain segments uncovered on high heat for 15 minutes ~ drain plantains and transfer to bowl of cold water (i found that cutting up the cooled plantains into small pieces before putting them back in the bowl makes them much easier to mash later)~ when plantains are cool enough to handle, drain, peel, and return to bowl~ add salt and egg whites~ mash with potato masher until smooth or fairly smooth (mine are always lumpy and they still taste really good!)~ divide plantain mixture into equal portions (about 8), form into patties, and cook in large nonstick skillet (containing olive oil) for 5 minutes on each side. flip once at the start to evenly coat patties in oil. reduce heat if patties start to brown too quickly.
