Weekend baking/cooking/eating?

I made some heart healthy chocolate cupcakes for my co-worker that turned out better than expected.
Also, some butternut squash soup with ravioli that was pretty darn good.
All this baby wants is a delicious caprese salad for lunch so I am going to the store in a minute!
Other than that didn't do much besides work. I did make strawbery soda cupcakes with mexican vanilla cream cheese frosting YUM!
I made my usual blueberry pancakes for breakfast on Saturday morning, but actually followed the directions this time about separating the eggs and they came out a little fluffier! I liked them.
Then I made bread pudding with bourbon sauce for dessert on Sunday night. We had dinner at our friends' house and that is what they requested. I put currants in it this time and it turned out well.
Don't feel like typing out the recipes on here right now but if anyone is interested, I'm happy to share.
I ate way too many cupcakes from my niece's bday party.....
I did make some homemade applesauce and posole last night.
Oh and I tried to convince DH to stay home for our anniversary dinner tomorrow and he insisted we go out. If he insisted, that means he has something planned...I wonder what.
Oh well, I will make us a night dinner on Friday to celebrate Mexican Independence Day!
I didn't cook/bake anything this wknd really but we did go to a British Pub (called Robin Hood) in Van Nuys where I had a chicken curry pot pie. It reminded me of going to Beckett's Irish Pub in Berkeley (which is where DH and I went on our first date). I had a cider with it, which I always had at Beckett's with their curry fries. This curry wasn't spicy enough for me but it was still good. The pastry was good on top but inside it wasn't cooked.
