These are categories for the sign-up sheet. The words out to the side are suggestions, not limits, that will appear on the sign-up sheet.
Fruit (including Waldorf salad)
Vegetables (carrots & dip, squash casserole)
Potatoes (casserole or oven fries)
Meat (ham, sausage or chicken biscuits, bacon)
Sweet breads (doughnuts, blueberry muffins, banana bread)
Savory breads (bagels, cheddar scones)
Fixings for mini-sandwiches (egg, tuna or chicken salad with crackers or small bread rounds)
Beverages
Paper products
And since I'm hosting and it's too hard to transport, I'll do 2 quiches for eggs.

How many people are signing up? There are a lot of categories. It covers everything, but is also sort of specific. Maybe you could say a starchy side instead of potatoes. It would allow a pasta salad, rice dish, or couscous.
Something seems off about listing the sandwich fixings and including the breads. Maybe it's because you've also got a category for savory breads and a suggestion of chicken biscuits AND the sweet breads. Maybe combine a bread category to include bagels and croissant and have the meats section include ham, turkey, chicken salad?
Honestly, I'd leave the suggestions off except for the breads and meat. I know you say they aren't limits, but I'd be looking up a squash casserole and waldorf salad even if I've never made them before.
I also feel that this is a very, very specific list. We do a lot of potlucks at work and tend to have more general categories, and then people edit from there based on what was already selected by others. How many people are coming?
Your categories sort of create a very specific meal, so I don't know if you are going for that. If they are actually signing up with you, rather than on a bulletin board or something, you can give gentle guidance for items that are lacking.
I would likely do something more along the lines of:
fruit/ vegetables (someone will likely sign up for a fruit tray and someone for a vegetable tray)
meat/ main dishes
sides/ salads
rolls/ breakfast breads
beverages
paper products
DESSERT!!!! You forgot dessert!
Hi dear! Hope all is well~ I agree with the pp re: menu - however I wouldn't ask your guests to provide the paper products or beverages... only because if that person flakes on you for some reason you will be stuck without forks, knives etc.
Maybe have some beverages and plates, cups etc. just in case.

The club has 60 members, so I don't think 30+ guests would be outside the realm of possibility. 20 people attended last year and there was a scheduling conflict that prevented many people from coming. I won't know until later.
I've only ever been to a few potlucks and there's always been overlap and gaps, so I was trying to prevent that. See: the one Thanksgiving where the main dish was fried catfish, the only sides were three things of sweet potatoes, and the dessert was key lime pie. See: the BBQ for 40 people where the only side was 4 homemade mac & cheeses.
