looking for easy inexpensive cookie recipe

We are doing our annual peanut butter drive at work and I'd rather do the fund raising aspect and make cheap cookies and sell them at work for $1 each than go buy 3 jars of peanut butter.  I'm thinking no bakes are easy,I have most everything here so all I need to buy for them (ironically) is the peanut butter.    But does anyone have any other awesome easy cookie recipes?  All I ever make is the best ginger cookies ever around the holidays and I don't want to burn out on them too soon in the year.

    she uses organic stuff - I don't. I also don't put the chocolate chips in there.

    • 1/2 c. non-dairy margarine (i.e. Earth Balance) i use reg stick butter
    • 3/4 c. natural peanut butter  jiffy works for me
    • 1/2 c. organic brown sugar  regular ol' publix brown sugar
    • 3/4 c. organic powdered sugar  reg powdered sugar
    • 1/2 t. vanilla extract
    • 1 t. baking powder
    • 1/2 t. baking soda
    • 3/4 t. salt
    • 1 c. whole wheat pastry flour  i can't find this.. i use whole wheat flour
    • 1/2 c. unbleached organic flour
    • 1/2 c. natural peanut butter chips  don't use
    • 1/2 c. non-dairy chocolate chips  don't use

  • I love no-bakes and they have been my go-to dessert this whole pregnancy so my vote is for the no-bakes ;)
  • No help for recipe but SweetBay has Peter Pan on sale 2 for $3 in the ad that started today.
  • I'm not much of a cook so I cheat when I make cookies. Betty Crocker cookie mixes are BOGO at Publix until tomorrow. I make those all the time.

    I also make cookies using chocolate cake mix (I like the Pillsbury with one cup pudding in mix). Add half a cup of oil and 2 eggs and bake at 350 for 8-10 minutes. You can add peanut butter chips in the mix  or colorful peanut butter M&M's on top for some color after you take them out.

    Jena, you should try to find this! I am in love with whole wheat pastry flour. It is a million times better than regular whole wheat flour. For the longest time, I put off buying it because it is a little pricy (compared to all purpose or whole wheat) but it makes a huge difference in texture. I buy it at my natural grocer.

  • Sara, these probably aren't the type of cookie you have in mind, but I made these http://tashaandsage.blogspot.com/2011/02/peanut-butter-and-jelly-thumbprints.html for Beckett's birthday last year for favors, and they were well received. Plus they are different and fun.

    That's all I've got. I don't make cookies too very often. My willpower isn't so great when cookies are involved.

  • you should make the peanut butter cookies with the hersheys kisses on top. mainly bc they are my favorite, and i'll come help you eat the extras you bakeWink

  • Thanks for the ideas chicas :)  I had already gone to the store and don't want to go back this week, but when I do, I'm making some of all of them :)
