Ok ladies, I am *trying* to embrace this fall weather (with tears in my eyes, and lead in my heart). The weather makes me want to bake, drink wine and eat cheese (shocking, no?), and make meals that are not good for summer. Things that come to mind: pumpkin vegan stew, regular stew, soups, shepherds pie, mac and cheese, chili. However, none of these sound appealing to me for tonight/this weekend. So can anyone suggest something I can make for dinner tonight that has *some* fall leanings? Same with Sunday, something warm and inviting and comforting?
or at least, tell me what you are making for dinner tonight?
Re: Dinner Ideas
Mmm I made Shepherd's pie the other day, are you sure you don't want to make that?
How about butternut squash soup? Chicken corn chowder? I make a crockpot casserole with chicken, the usual cream soups, and a red, green, & yellow bell peppers which I call 'fall chicken' because of the colors. I don't know why, but these strike me as kinda fall:

I will think on this some more...
Ok, reading fail, I see you don't want to make soup. Why not do a normal dinner but do pumpkin bread or muffins?

Chicken & Sweet Potato Stew:
Chicken, Sweet Potatoes (Yams), Onion, Can of Stewed/Diced tomatoes, Apple Juice. One of my fav-o-rite fall meals. And apple breakfast crisp. I live on it for breakfast in the fall.
Dinner tonight is Asian burgers, Pineapple/Mango Salad and some Redskin potato salad I've been craving.
Side dish idea:
Butternut squash, sweet potatoes, regular potatoes, red onions, red/orange pepper. Toss it all in balsamic vinegar & olive oil & roast for about 45 minutes.
I'm hungry now.
Yeah, I almost consider anything in the crock pot fallish. :-) What about just a roast with pot. and carrots?
Or itailian beef and then get some good rolls and some cheese to top them.
Or open face turkey sandwiches with mashed pot. and gravy on top.
dang it, my lunch might get raided early today.......
I'm not going to be a lot of help, but I will be stalking this thread for ideas myself.
I did make sloppy joes (that I put in the crockpot to stay warm for H) last night. Nothing major.
I am majorly CRAVING a roast... soon. We have ONE venison roast in the freezer from H's deer last year that I've been saving for fall and I am now dying to make on a Sunday very very soon.
I like chili, roasted chicken and the open face turkey sandwich with mashed potatoes and gravy is sounding amazing right now too, thanks a lot Moleson...
Dear Laura,
I hate you for making me want to eat tons of things that I won't get a chance to for awhile.
Thanks a lot!

I have an aMAZing recipe for venison roast in the crockpot that is so super easy, if you want it. I can send it to you when I get home. Whenever we get a roast from Jeff's brother I immediately start drooling because I love this recipe so much - and it's only like 4 extra ingredients. Jeff puts is a roll, but I love it over mashed potatoes. Yummmmmmm.
