A mom in my group is having a baby. I'm trying to think of something to send for dinner BESIDES a pasta dish. I don't really want to send raw food and I don't want something that needs to be eaten right away. Nothing too "out there" ingredient wise. I know, lots of criteria.
My first thought was shepherd's pie, but the mom commented she's picky and only likes hers. Another thought was a thing of scalloped potatoes with ham steaks baked in and a steamer bag of green beans and brownies. I was also thinking chili and cornbread, but that's similar to a pasta. (When DD was born 4 people in a row brought us a pasta dish).
Re: Dinner idea needed
hi dear! I have a great recipe for Turkey Enchiladas that also freezes well - but would taste best reheated next day. Let me know and I'll type it out for you - from Taste of Home magazine.
Cheers!
My usual dish would be a spaghetti casserole, so that's no help.
Do you have to send dinner? A girl on D&R had a stillborn baby (so I'm talking funeral food now, but) she said she was so appreciative of her one friend who sent over a basket of breakfast foods. Banana bread, oatmeal, bagels. No one else sent that, everyone sent casseroles.
I have a recipe for incredibly good banana bread that makes two loaves. It freezes beautifully, so I always toss one in the freezer until I'm in the mood again.

Thinking of doing cosmetic updates to a dated home? These were our costs.
I did chicekn enchiladas for the last woman and it didn't go over so well or I'd do that. I've found people in these parts have very basic ideas about food. This mom is all of 18 and has barely left the county.
We sign up to do dinners, but I have thrown in breads before. I have a ton of butternut squash puree so I was going to do some muffins.
My favorite things to receive when I was a new mom was snacky type stuff - trail mix, granola, cookies, etc. Because it was so much easier to graze all day than it was to sit down and eat meals at regular meal times. I wanted stuff that could sit out on the counter all day, stuff that I could eat one-handed while holding the baby.
To be perfectly honest, a frozen meal would have sat in my freezer for months, then probably get tossed.
This was going to be my suggestion. Beef stew and chili would also be good but I would love to get a homemade chicken pot pie!
Since the weather is getting cooler, I would make a Turkey Meatloaf (which could be used for sandwiches the next day), Buttermilk Mashed Potatoes and Sauteed String Bean & Baby Carrots + Apple Pie. A nice homey meal that everyone could enjoy.
