Scrambled eggs & hashbrowns
French toast
Veggie stir fry
spaghetti squash lasagna
minestrone soup (has pasta but is limited and chock full of veggies)
portabella burgers
stir fry
iowa girl eats has some good meatless meals.
Breakfast (any combination of eggs - including casserole, pancakes, waffles, French toast, hash browns, fresh fruit)
Chili
Potato Soup
Salads (hard-boiled eggs or nuts could stand in for a protein)
Baked Potatoes (top with broccoli & cheddar, chili, or other options)
Burritos
Are you up for using rice or quinoa? I find that even when I'm tired of pasta, I'm ok with rice, especially brown rice. Quinoa can be subbed for pasta, but is actually a good source of protein too.
For meatless and pasta-less meals, I'd probably invest in a bean cookbook. My mom has one if you are interested in knowing the name.
I eat salads, veggie burgers and Thai/Korean dishes on a weekly basis. We also make pizzas quite often with the 100% whole wheat pizza crust.
We bought eggplant at the Farmer's Market a couple weekends ago, so we've also recently made eggplant parmesan and eggplant lasagna. Yum.
