Recipe post?

I was wondering if I could make a thread now and then and get recipes you've recently tried and liked - bonus points for easy ones!  I've felt inspired to cook lately (some weeks are better than others, we always cook dinner, just sometimes it's mac&cheese or spaghetti and I get bored with those) so I need some new recipes.  I'm trying out something today in the slow cooker and I'll let you know if it worked tomorrow!

  • I almost never cook w/ recipes.  I just throw ingredients together.

    see, I don't know how to do that, lol.  H does stuff like that when he makes dinner, but I'm a planner.  You could make those meals into recipes though :)

  • If we can't make it sticky at the top - we could consider an easy blog. My month board had a cooking blog for a while and everyone could update it.

  • Well, DH fav thing I make is:  I marinate chicken (make DH clean & cut) in Newman's Balsmic Vinegrett and then cook in pan.  I cook cherry tomatos or sundried tomatos, onions, artichoke hearts and garlic until everything starts to get soft.  Make penne pasta and toss w/ the veggies.  Add olive oil as needed, feta and capers, then chicken.  Bonus: pine nuts.  But, I'm not good with recipes (amount, how long to cook), 'cause I just wing it.  In fact, I may be forgetting things...

    Also, add gorgonzola to mac & cheese.  Yum!

    Last night I made chicken breasts stuffed with goat cheese and spinach. I first pounded out chicken breast so they are flat and thin. Then season both sides with S&P. I sautee spinach in olive oil with garlic and salt. Then I take a chunch of goat cheese (or swiss is good too) and place it in the middle of the chicken breast. Top with spinach. Then roll the chicken breast up into a little bundle and place open side down in a casserole dish. Add a little wine and chicken broth in the bottom and bake for like 30 minutes or less at 375.

    That's one of my go-to dishes. It's really easy and super flavorful...and healthy!! It's good with rice too b/c the broth in the bottom of the pan is so delicious it can't go to waste!

    this is awesome and I've never tried stuffing chicken before!  And perfect timing because I think I'm getting spinach next week in my FCF box :)
