Great soup recipe.

Being a SAHM I've had a hard time finding meals to have for lunch for just myself (other than left overs).  With fall coming up I decided to try making soups that I can put in the fridge or even freeze and have throughout the week.  I found this Tomato Basil soup recipe on Pinterest...

and it was awesome.  We tried a little bit of it tonight with our steaks and corn on the cob.  It was pretty much a spectacular meal all the way around.

If anyone has some good soup recipes for me to try out feel free to share them!!

    I made a yummy soup for the inlaws yesterday.

    I roasted about a pound of peeled, chopped butternut squash with one peeled, cored, chopped apple and 3 whole (peeled) cloves of garlic for about 40 minutes (add the garlic during the last 20 minutes). Before roasting I tossed everything with salt, white pepper, cumin, cinnamon, and red pepper

    Then, I sauteed about half a medium onion in a couple of tablespoons of butter and added the squash/apple/garlic. I added about a half a cup of apple cider and enough chicken stock to cover and brought it to a boil, then turned it down to a simmer. I simmered for 20-25 minutes, then added about 1/2-3/4 cup of half and half (we didn't have heavy cream.) It was a little flat, so I put in around 2 Tbsp. of white balsamic vinegar. Apple cider vinegar would have been good, too.

    I used a stick blender to puree it all, dished it out, then added a dollop of goat cheese (something like Greek yogurt would also be ok, I think) and some freshly grated nutmeg to each bowl. I'm already excited to make it again!
