pumpkin pancakes for bkfst this morning. Made some extra to freeze and use for breakfast next week or when we are craving pumpkin pancakes
overnight steel cut oatmeal for breakfast this week
butternut squash and black bean enchiladas w/homemade enchilada sauce
roasted cauliflower with raspberry chipolte sauce
qunioa for a few lunches and dinners this week
homemade pasta sauce
two kinds of crockpot applesauce
chicken tortilla soup
A, I just don't know how you do so much! You must be in the kitchen all day. I always have to take sit-down breaks when I spend so much time in the kitchen.
I made this spicy tofu and lemongrass stir fry recipe with some lemongrass that a co-worker grew. It was yummy! It was the first time I worked with lemongrass and I think I'm a fan.
I agree with P, Amy. You must have extra arms that retract so we can't see them.

Yes, I do take breaks but honestly most of these meals are done in the crockpot so for me, it works.
I love being in the kitchen. I enjoy cooking and baking as it is my therapy.
Plus I look at it this way-lots of time in the kitchen over the weekend makes more time with DH during the week after work.
One of our friends gave us a ton of apples so I made some applesauce. Homemade applesauce is the best!
I also made a big pot of pasta to freeze and eat throughout the week. I am trying to cook more freezer meals on the weekends because I am too tired to cook after work.
After the homemade applesauce I made over the weekend, I am never buying it again. What kind of apples did you use?

They are green but I don't know what type. Maybe golden delicious. I am probably going to make another batch to freeze for the holidays because I love applesauce with my Christmas ham.
I am doing good, just tired since I am back to working full time. I hope you are doing good too

I am doing great. Just working and studying for an exam that is in November.
I made Pumpkin Spice Latte cupcakes. They were amazing.
I also made Spicy Pumpkin Black bean soup. As you can tell, I have a pumpkin craving right now.

I had a few fresh homegrown zucchini and wanted to make healthier baked goods, so I made these:

Both came out delicious and I loved that they are "healthier" versions (lower fat, whole grain, lower sugar)
