Re: wfd monday!
i had a super awesome cooking weekend, so i'm on break tonight - lol! we'll be having costco rotisserie chicken leftovers, pre-packaged stop&shop mashed potatoes or mac and cheese (dh and Ava can choose, I don't want to spend points on either), and steamed broccoli and carrots - also in a mix bag that just gets nuked.
what i did cook this weekend:

ham and swiss double pinwheels - i don't eat this type of thing, but Ava and dh liked it for breakfast and Ava took the leftovers for lunch today - her choice! http://sotastysoyummy.blogspot.com/2011/09/recipe-swap-ham-and-swiss-double.html i imagine it would be good with scrambled eggs
tilapia that was my very own concoction: i sauteed the onions, sliced, from our CSA and added two fresh minced cloves of garlic - in a basil infused olive oil, then removed to a plate. then i seasoned flour with salt, pepper and herbs de provence, and dipped/dusted the tilapia in it and sauteed it in the same pan - with a bit more of the basil oil. flipped it over, and put the onion mix back on top, poured some chardonnay over it, added a tiny bit of butter to the pan and let simmer - added a drop more wine - chopped some parsley, also from our CSA, and added it on top too. squeezed a little lime juice over the top.
served over oven baked potato rounds (another CSA harvest) that i seasoned with garlic powder and salt - and used a lot of Pam.
steamed green beans on the side.
this was delicious! with a glass of the chardonney too!
and tomorrow is tacos -
pasta with shredded turkey, olive oil and feta.
or cereal. depends pasta is cooked but not sure exactly what time i am getting home.
