Gladly! They are very good and pretty easy.
It is from the magazine Cuisine at Home (my grandma got me a 2 year subscription, and I am SO thankful that she did, we are always finding things to make!)
Makes 4 servings (I believe they are supposed to be made as open-faced sandwiches, but we always eat them as regular.)
8 strips bacon
2 c shredded cooked chicken (about 8 oz)
1/4 c purchased sun-dried tomato pesto (I always use regular pesto because I can never find sun-dried tomato at the store).
1/4 c slivered red onion
some kind of roll
mayo
thin slices of tomato
black pepper to taste
1 c shredded Gruyere or Swiss cheese
Preheat broiler with rack 6 inches from element. Cook bacon in skillet over med. heat. Transfer to a paper-towel lined plate. Combine chicken, pesto, and onion in a bowl while bacon cooks. To assemble sandwiches, spread cut sides of rolls with 1 Tbsp mayo. Top each with 2 tomato slices and season with pepper. Place 2 strips bacon over tomatoes. Arrange 1/2 c chicken mixture on each serving. Place sandwiches on broiler pan or baking sheet; broil 3-5 mins. Top each sandwich with 1/4 c cheese. Return pan to oven and broil until cheese begins to brown, 3-5 mins.
