We are in such a bad dinner and lunch rut lately. Sooo good on eating healthy before vacation, and now that we are back, not so good. Plus I have not felt very motivated in the kitchen either.
Today for lunch= Taco John's taco salad. Oh yeah!!!!!
Dinner the last 3 of 4 nights= frozen pizza. Yummy, but need to get out of the rut!

Well, not all of these are crazy healthy but these dishes are in our rotation:
Pulled pork (I'm making it for tonight. It's not a weekly dinner)
Tacos or enchiladas
Homemade pizza - cheese, pepperoni, taco
Burgers
Chicken - grilled, baked, etc.
Alfredo - with or without chicken/veggies
Spaghetti/lasagna/chicken parm
Pork chops
Breakfast for dinner - biscuits and gravy, pancakes, eggs, bacon, sausage, etc.
Roast
Hot dogs - on nights when Son has a game and we need something quick (I like to roll them up in crescent rolls with a slice of cheese and bake)
As you can see, we eat a lot of chicken. Our grocery store has chicken breasts for $0.99/lb at least once a month, so I stock up. We've got about 36lbs of chicken breasts in our freezer right now. I stock up on other meats as well when they're on sale. Whatever we have in the freezer that week determines what meals we have.
I think I bought close to 20 lbs of chicken for the two of us the last time it was cheap. I like a good deal!
When I get lazy in the kitchen, I learned to love my crock pot! I've been googling new recipes to get away from my usual chili/pot roast meals it.
If I'm feeling super healthy, I love salads with spinach, chicken, berries, and almonds.
