    Tonight: rosemary roasted chicken and vegetables
    Tomorrow: margherita pizza tortillas
    Wednesday: tomato cobbler with gruyere biscuits
    Thursday: leftovers
    Friday: grilled chicken and slow cooked broccoli with lemon breadcrumbs
    Saturday: FFY

    Also, you could make rice pasta...it's not THAT bad...

  • Can I just say I'm envious of those of you who meal plan and/or cook dinners more than 3x per week? I RARELY eat dinner before B is in bed, and usually I end up eating a bowl of cereal or a sandwich. I want to have family dinner time with him, but since it's just the two of us it makes things difficult. And I refuse to pick up something on the way home just because it's "easy".

  • Peapod is grocery delivery. Getting to the store is half the battle...I would entertain a meal service, but we definitely can't afford that.

    I would love to cook like this, but my DH would give me the side eye!  He was raised as a plain food type person.  I've slowly converted him to liking "finer" foods.  For example, his mother never had tortellini until our wedding...even then she was scared to try it. DH had never had it until he started dating me, and the first time I made it, he was skeptical.  Now he likes it.

    Maybe once B gets older, you two can do meal planning (help pick out fruits and veggies). I know it is easier said than done.

    Don't stress-maybe start w/one day a week (like a Sat or Sun) and see how goes.

    BTW-aren't you the one who gave us that loaded potato soup?? That is a meal!!

    Amanda this is us too. With Eric working 2nds and me being by myself cooking is a pain during the week. I try but some nights its I make something for her and grab a sandwich or something because I have to get to bed shortly after her. I love the nights I can cook and now that its going to cool off again I will probably throw chili, lasagna or other things that make good amounts of leftovers together on the weekends so at least I get something a little better some nights.

  • Tonight was Creamy Basil Chicken over fettucini.  Very easy and a diabetic friendly recipe.  Tomorrow is Chicken and sausage paella in the crock pot- super easy and TASTEY!  Wednesday we'll probably have steaks, Thursday is BBQ chicken in the crockpot, and Friday I'm not sure yet- have to do my new two week meal plan.  Saturday we'll probably have mac 'n cheese in the crockpot.
