What are your favorite recipes that make good leftovers?

Casseroles are great for leftovers. They're often better the 2nd day.
I make sauces and soups in huge batches and store them in bags in the freezer. I count those in my leftover stash.
I hardly eat meat, so I can't speak to that. Basically, anything that's not crispy I count as good leftover material. More important than what you store is how you store it. Store sauces separately, for instance.
Soups and Stews are A-mazing.
I will make a soup/stew on Sunday, and it can get me dinner through Thursday. I really love this way of cooking. Less mess during the week when I am super busy, and I don't eat out every day.
A lot of the things I cook provide what E and I consider to be good leftovers. E goes to school 3 nights a week and is gone before I get off work. I cook larger portions on the weekends and the nights that he is home so that there are plenty of options for him to choose from before he goes to class. He also takes leftovers for lunch. Here are some of the things that we like for leftovers.
Cranberry Chicken - this can be done in the crockpot too. The chicken shreds if done in the crockpot. Do everything the same just don't thaw out your chicken before hand. We serve over rice, but its also good over pasta too.
PW's Sour Cream Noodle Bake - is awesome. It reheated really well.
Spinach Lasagna Rolls - really yummy. E doesn't like them that well but its a great leftover for me.
Broccoli Cheese and Potato Soup - this is AH-MAZING! It reheats super well and you can either make it chunky or not. Its one of my go to winter dinners.
Corn and Bacon Chowder - as much as I love this soup its tricky to reheat. It does better if you put it back in a pan and heat slowly and add a bit more milk. Heating in the microwave heats it too quickly and milk does weird things.
My Mac and Cheese - freezes and reheats really really well!!!
