Meal Plan Monday

OK.... lets see if we can pick the board up. At least for a day haha...

I am a huge meal planner. I dont shop until my meal plan is made but I am always looking for ideas because I always seem to get into a funk and do the same things over and over again...  So maybe we should do this on a regular basis..??

Anyways...
Tonight-Breakfast (eggs, sausage, strawberries and blueberries, OJ and toast)
Tomorrow-Loaded Baked Potato Soup (in the crock pot) with grill cheese (was supposed to do this last week.. oops)
Wednesday-Chili and Cornbread
Thursday-BBQ Crusted Chicken Breast with rice pilaf and broccoli
Friday- Mesquite BBQ Chicken over a bed of Salad
Saturday-Pizza (homemade) with Salad....

  • I dont plan, I try to but I dont. I do want to make that Potato soup though, sounds good. Hopefully this dang weather will get cooler so we can make more soups.

  • Here you go ladies...

    6 large baking potatoes, peeled, cut in 1/2 -inch cubes
    1 large onion, chopped
    1 quart chicken broth
    3 garlic cloves, minced (or pressed)
    1/4 cup butter
    2 1/2 teaspoons salt
    1 teaspoon pepper
    1 cup cream or 1 cup half-and-half cream
    1 cup shredded sharp cheddar cheese
    3 tablespoons chopped fresh chives
    1 cup sour cream (optional)
    8 slices bacon, fried & crumbled (I sometimes use real bacon bits, makes it easier for me haha)
    cheese, for sprinkling

    Directions:
    1. Combine first seven ingredients in a large crock pot; cover and cook on
    HIGH for 4 hours or LOW for 8 hours (potatoes should be tender).
    2. Mash mixture until potatoes are coarsely chopped and soup is slightly
    thickened.
    3. Stir in cream, cheese and chives.
    4. Top with sour cream (if used), sprinkle with bacon and more cheese.

  • Mmmm I cant wait to try your crockpot soup recipe. I try to plan but only make it about 2-3 weeks out of the month. We are flying on wednesday for a few days so this week is a bit more boring so I dont have to grocery shop. Tonight is dream dinners steak salsa verde. Tomorrow is sandwich fixins for lunch and maple glazed salmon for dinner.

  • I just did a whole blog post on meal planning (link in siggy).  This month we?re trying out once a month cooking.  This week I think we?ll have:

     

    M- PW?s white chicken enchiladas (HOLY YUM!)

    T- Chicken caesar salad with cornbread

    W- Basil salmon with spinach salad and couscous

    Th- Broccoli, quinoa, chicken casserole

    F- Breaded chicken tenders and sweet po fries

    S- Sausage grinders

    Su- Pizza

  • Well, Jess you know that I love meal planning and we have 2 different meal plans at our house.

    HIS: Today - Maple Pork Chops with Salad and Glazed Carrots, Tues - Shredded Beef Tacos with Black Beans, Wed - Baby Back Ribs with Salad and Corn Bread, Thurs: Sausage Pizza, Fri: Baked Chicken with Sweet Potato Fries and Coleslaw

    HERS: Today: Boca Burger with Glazed Carrorts, Tues: Mexican Chicken Salad with Black Beans, Wed: Spicy Pasta Salad, Thurs: Baked Veggie Pizza, Fri: Hummus Wrap with Baked Sweet Potato Fries

  • You girls are all so good at cooking every night!  I only cook every other night and then we have leftovers the next night.

     Sunday: Chili Spaghetti with cornbread; Monday: leftovers

    Tuesday: Ham with pineapple, Twice Baked Potatoes, Corn on the Cob; Weds: leftovers

    Thursday: Tacos; Friday: Leftovers

    Saturday: Out to eat

  • Tonight we had a frozen pizza and salad.

    Tues: BBQ pulled pork (crock pot), broccoli, potato salad

    Wed: frozen lasagna

    Thurs: jambalaya

    Fri: out to eat with BIL/SIL who will be in town

    Life with a baby has turned us into lazy cooks!  We do a lot of frozen stuff these days because C gets super fussy around 4-5 pm and one of us has to hold him until bedtime. Confused

  • i don't really plan for certain days, i just get stuff to cover most nights for the week. we have lunch here, not dinner since don works nights. well, i mean we have dinner but i don't make anything exciting.

    today we had chicken meatball subs and fries. for the rest of the week i have pulled buffalo chicken in the cp and roasted ranch potatoes, sourdough turkey and cheese melts with fries, lasagna with garlic bread, turkey stroganoff, and pork chops and mashed potatoes. i used to cook a lot more exciting things but now with the newbie i have become kind of lazy

  • I'm better about planning when DH is home with me to cook. we usually do every other day. he'll cook then I'll cook. so we both pick our days. currently he's working nights and with just me and the baby i have zero time and paitence to cook.

    i may do stroganof in the crock pot tomorrow though

  • I always try to plan and then something comes up and throws it off!  Like yesterday I was planning on stir-fry and my husband calls on his way home to tell me his parents are getting pizza and want us to come over.  Tonight he's playing football so he probably will just want a light snack before he goes.  I really want to try that PW's white chicken enchiladas sometime this week!
