Spaghetti squash! Has anyone ever tried it? I bought one this week at the store after a friend recommended it. We cooked it last night and it was awesome!
If you haven't tried it, it's basically a healthy, low calorie substitue for spaghetti but it feels substantial! When cooked, the squash fruit actually separates into spaghetti-like noodles on the inside that are easy to separate from the outer skin. So you can literally scoop it out and add your favorite spaghetti sauce and enjoy!
We microwaved our squash for 15 min, and we added stir-fried green beans and snap peas and Indian curry simmer sauce to the noodles. Yum!

I absolutely love spaghetti squash!!! SO good! We make it quite often, and in fact we have some in the fridge right now. I made chicken parm on Sunday, and put on top of spaghetti squash. I made enough extra to use it on other stuff, like with sausage and onions last nigh. Oh, and it is SO good with just some butter and salt.
I highly recommend it! And yes, it is quite healthy as well.
I love spaghetti squash! The only way I know how to make it is by roasting it in the oven, but I'm def going to try it in the microwave. I can't believe it only took 15 minutes??? I love all the fall squashes...acorn, butternut. I make a mean butternut squash soup w carrots...it's about that time of year for me to make a batch!

Yeah, the microwave is great when you come home hungry :P It worked really well! You just have to poke some holes in it and microwave it for 12 min (ours took 15 because our microwave sucks) - basically until the skin gives pretty well
