Broccoli Potato Soup
Ingredients:
6 potatoes cut into small chunks
2 crowns broccoli cut into small pieces
? white onion chopped
? package of bacon
1 Pint of half and half
1 can cream of celery
2 stalks celery, chopped (this is optional)
Milk
Salt and pepper to taste
In a large pot: put cut potatoes into pot and just barely cover with water. Boil until tender, but not mushy.
-At the same time, boil or steam your broccoli in a separate pot. You want the broccoli to be cooked, but still pretty firm so it doesn?t turn to mush when you add it to the soup. --Also at the same time, saut? your onions and celery in butter and fry your bacon. Once the bacon is done, chop it into pieces.
Once the potatoes are almost done, stir in cream of celery and half and half. Then mix in all other ingredients. Add milk until the soup is as thin as you prefer. Salt and pepper to taste. Simmer on low for 10-15 minutes.
*I like it plain, but DH likes to add shredded cheddar to his bowl. Enjoy!
