I made a chopped autumn salad that was good. I'd probably cut back on the dried cranberries and some of the dressing next time. Between those two things and the fruit, it was slightly on the sweet side.
I also made quinoa burgers and they were a big hit. I under-salted a bit so that's something to fix next time. I added a chopped, seeded jalapeno and that really made them more flavorful. I used a mixture of the grated carrot and zucchini (make sure you squeeze the liquid out). And my mixture was a bit too wet so I had to add extra flour. I am toying with the idea of putting some corn in there next time.
I also ate some amazing rum-pear French toast at Sunnyside Cafe this morning YUMMMM.
Mmm, this sounds good. Looks pretty quick and easy too. Was it? Did you know quinoa is one of the few vegetarian foods that is a complete protein? You don't have to do the ol' combine-rice-and-beans business. I find it fascinating that a grain can have so much protein.
No cooking or baking for me this weekend. I did have some roasted garlic with goat cheese on wafers at restaurant. Super yummy.
They're easy to make -- you boil some quinoa, add a bunch of stuff to it, and mix, then fry up the patties. It's a bit time consuming though (unless you get a couple of frying pans going) because they take four minutes per side, and even though the recipe said it made 10 patties, I got 15. But you can easily make them ahead of time and keep them warm in the oven. Or mix up the batter and only cook half of it, then make the other half another night? Or, just halve the recipe to begin with
