Stupid veggie conversation/question

After we had green beans or broccoli for a dinner veggie for around the 5th time in a row, this conversation ensued between me and my veggie-hating DH...

DH: You know I will eat other veggies besides green beans and broccoli.

Me: Like what?

DH: Corn.

Me: That's not green.

DH: Lima beans.

Me: That's not good.

DH: Well, what else is there?

Me: Um...

I am drawing a blank here. I've made zucchini and summer squash and bell peppers and DH tolerated them for a little while, but he doesn't like them. What kind of green veggies do you serve with dinner?

  • We usually only serve broccoli or green beans, mostly because they are quick and easy. Occasionally we will have asparagus, peas or spinach, but that's about it. DH and I have the same arguments about veggies.

  • We also love brussels sprouts with garlic and sugar snap peas. Most of the time we get the frozen variety packs to mix things up. One of our favorites is a mixture of beans with cranberries.
  • Well we don't eat veggies, which soon will change when DD starts realizing what she is eating, since DH only likes green beans. But spinach is something my parents made us eat as a kid. I like brussel sprouts and early june peas. With the peas, I put them in a skillet and heat up with some onion and pepper. Yum!

  • Snow peas are delicious in a little butter with salt.

    Spinach, kale and collards are delicious, if prepared the right way.  Spinach is best as a salad or slightly wilted with butter or olive oil, salt and lemon juice or nuts.  Kale is good with white beans and a bit of bacon and collards are best southern-style: slow cooked with bacon or ham, onions and other flavors like here: http://www.myrecipes.com/recipe/southern-style-collard-greens-10000001932600/

    If you're iffy on any of those a creamy gratin is a good way to test them out while still having some familiar comfort flavors in there.

    And, not green but squash this time of year is a great side--butternut with butter, a touch of cinnamon and the tiniest bit of brown sugar or honey.  YUM!

    I forgot about snow peas and snap peas. I think DH will eat those. And he'll eat spinach, but he doesn't trust me to cook it right, lol. He has to have it *just* the right amount wilted.

    what's wrong w/ corn?  I don't think its the most nutritious veggie every but its not bad.

    I could personally eat brocolli every night

  • We all love broccoli, esp. DS, he gets so excited when he see's it he repeats "bocli, bocli" over and over again.  We usually rotate frozen sweet corn, peas, broccoli, and edamame during the week.  We are going to try and do fresh/different veggies on the weekend when we have more time (like squash, pumpkin, etc) and see what we can easily rotate into the weeknight meals.

  • We love all types of veggies, and you've gotten a great list above...but am I the only one who gets a kick out of asparagus pee? I'm always amazed at how soon after eating it happens! Apparently it's also genetic...not everyone can smell it but everyone has it! Fun factoid of the day!

  • My go to sides are-

    Brussels sprouts roasted with balsamic vinaigrette

    Asparagus sauteed in a little garlic

    Green beans and slivered almonds

    Sauteed cabbage with a can of rotel

    Plus I get the steamfresh bagged veggies a lot.

    Lol! Yeah he said "I'll eat spinach if you let me cook it". If I let him? Lol, it's not like anyone is stopping him from cooking!

  • My standard go-to veggie sides:

    - Sauteed bok choy (baby or regular)
    - Spinach salad or regular salad 
    - Roasted broccoli
    - Sauteed zucchini
    - Sauteed green beans (wow, I saute everything.)  
    - Braised cucumbers 
    - Greens ... kale, cabbage, chard, spinach, sauteed in garlic, chicken broth and other yummy stuff
    - Roasted Brussel sprouts (seriously, I hated Brussel sprouts before this recipe)

    - Roasted Sweet Potatoes

    - Roasted cherry tomatoes

    I often make dishes that incorporate veggies that I wouldn't serve plain. I.E. I hate cooked carrots, but I often grate carrots and zucchini and add them to spaghetti sauce. I also make shrimp stir fry or etouffee that has bell peppers and celery in the sauce. I figure if there are enough veggies in the dish, I don't have to serve a separate side dish. 

  • Asparagus, peas, spinach, edamame, zucchini, or make a side salad with lettuce, carrots, cucumbers, etc. If I had a V8 or salad earlier that day, I will count tomatoes & basil (caprese) or corn as a veggie dinner side.

  • asparagus, peas, spinach. I used to hate spinach but now I'm a fan bc I think it's easy to cook with in terms of "mixing it in" with whatever you are making - same with peas - you can throw them together with some rice etc.
