Need a potluck dish

My family starts Tday celebration the night before.  There's always a hot dog roast and smores and the rest is potluck.  Dishes that have already been claimed are mac and cheese, venison stew, a sausage bean thingy, sloppy joes, and pumpkin cookies.  I'll do peanut butter blossoms but need to take some other dish. 

There are no vegetarians.  We all suspend healthy eating for tday, but I was thinking maybe a veg?  I'll have to transport whatever 1.5 hrs, but there is a full industrial kitchen when we get there so I can cook there.  We also tend to party late into the night so something to nibble later might also be good.

Keep in mind that there will be 30+ people so any sort of major assembly won't happen.

  • I really enjoy a layered bean dip and it usually travels pretty well.

    I dont make it from scratch really, I use jalapeno refried beans that I warm up first to make it easier to spread into my pan. the I do spinach or shredded lettuce. Everything else has no order but I like cheese, cilantro, olives, lots of salsa, sometimes mixed in veggies like onions, green onions, peppers and mushrooms. I then top it with greek yogurt or sour cream :)

  • This isnt one of my favs but my mom bring it to every family gathering and its always the first dish gone:

    CHEESY VEGETABLE CASSEROLE  

     

    1 (16 oz.) pkg. frozen mixed vegetables
    6 oz. Velveeta cheese
    1/2 stick butter, melted
    Melt butter with cheese and pour over frozen vegetables.
    TOPPING:
    2/3 c. Ritz crackers, crushed
    1/2 stick butter, melted
    Mix and put on top of vegetables. Bake at 350 degrees for 45 minutes

  • Oh my goodness, I got indigestion just reading that.  6, you must bring a vegetable!  And it must come close to resembling its natural form!

    Broccoli-mushroom casserole  (haven't made it, but it seems like it could be simplified greatly with frozen veggies)

    I would definitely keep it simple.  Would they snack on a veggie tray with ranch?

  • Healthy is allowed I was just trying to say that there won't be someone put out that there wasn't anything lowfat.  There will be a huge veg tray and all of the fancy stuff the next day. 

     Wednesday tends to be more simple, comfort foods.  People show up after work at all times of the day and night since we're in the middle of the woods and people are traveling.  Usually things just sit in crockpots and people help themselves as they get there and get settled. 

    I like the broccoli casserole idea.  I might have to see if I can find a broccoli crockpot thing.

  • I just saw one of my friends post a really good Vegan dessert recipe at www.facebook.com/AtHomewithEliseSosa  and I know a recipe for an easy Coke Roast that makes its own gravy!  Lot's of my friends love this:

    1 3lb roast

    1 can of Coke

    1 can Cream of Mushroom or Celery

    Put all ingredients in a bean pot and cook at 350 degrees F for just 3 hours. Easy to transport and nice and tender!
