I would highly suggest going on the weekend like you are planning to do and not go during the week.  We went on Wednesday and were so disappointed.  No pony rides, the petting zoo was a joke (4 goats and nothing else) when we went to go in the woman told us they were eating and have been agitated all morning and would not be a good idea to go near them.  The hay rides were only being given to field trips and if you were there on your own, too bad you had to wait.  The only things that were up and running were the kid train and the carousel.  We ended up selling our non-refundable tickets to other people luckily to recoop some of our money.  There were also no food booths open either.  Now... that being said I have heard the weekends are a totally different experience but we just wanted to avoid the crowds.  So don't do what we did and go during the week!
