Sunday baking/cooking/eating?

  • Didn't cook anything special but we ordered pizza from the organic pizza place by us last night. If you're ever in N. Hollywood, you should check it out. http://www.lenzinishollywood.com/

     

  • We made more pineapple guava cobbler, and dinner tonight was pretty awesome if I do say so myself - Greek shrimp saganaki (prawns in a tomato sauce with herbs and feta), which we had over polenta and sauteed collards and beet greens. Yum!

    ETA: here's the guava cobbler recipe. You could use any kind of fruit.

  • I was trying to make sugar cut-out cookies for DH to take to work today but that was a fail. I had a cookie mix from the box I used as a backup.

    I did make chicken pot pie via Pillsbury recipe. It turned out pretty good...except that some of the filling leaked and burnt on the bottom of my oven.

  • I made/baked:

    -pumpkin oatmeal bread w/homemade cream cheese frosting

    -applesauce nut bread from here http://www.skinnytaste.com/

    -turkey meatballs

    -chickpea tacos (recipe below):

    Chickpea tacos:
    -1 can of chickpeas (aka garbanzo beans), drained and rinsed
    -1 tbsp of tamari sauce (or low sodium soy sauce)
    -2 tsp of fresh lemon juice
    -taco seasoning (if you use the packets, use about 1/2. If you make your own. use about a 1tbsp)
    -Hard taco shells
    -toppings for tacos

    Pre heat oven to 400 degrees.
    Wisk the sauce, lemon juice and taco seasoning in a bowl. Put chickpeas in the mixture and mix.
    Put the chickpeas on a baking sheet and bake for 20-25 mins or until crunchy
    Meanwhile prepare toppings for tacos.
    Once chickpeas are done, take out of oven and assemble tacos.

  • Since DH was out of town this weekend, I wined and dined myself on Saturday with some baked salmon, shrimp, and a glass of my favorite Chardonnay.

    Yesterday I baked chocolate chip cookies for our work potluck today.

  • I made white chocolate candy corn M&M cookies. SO yum. I just used the Nestle Toll House choc chip cookie recipe but subbed candy corn (white chocolate) M&Ms for the chips. SO SO good. I shared with friends and they were raving. I highly recommend. :)image
