About a month ago, my office moved from a few blocks away, to downtown (I live in north OKC). I used to have the option of coming home for lunch, and now I don't. This has resulted in me eating out for lunch almost every day, which is bad for my bank account and waistline. It's been such a long time since I had to bring my lunch to work, that I'm really struggling to think of things. Can you give me one or two of your favorite to-go, cheap/healthy lunch ideas? TIA!

Chicken nugget salad - Morning star chicken nuggets, romaine/baby greens/spinach tossed in salsa. You could add chopped peppers, tomato, etc but I like to keep it simple. It's actually really yummy! Pair it with an apple or piece of fruit.
I eat leftovers a lot for lunch.And morning star black bean burgers. I've made morning star black bean burgers tacos before (just a tortilla, then cut up the BB burger and add onion, tomato, cheese, etc).
Sorry that's not much, I'll be looking for other people's ideas!
I eat leftovers probably twice a week and eat out every Friday as a treat to myself. The other two days I usually do a can of soup or a lean cuisine/smart ones meal. For snacks I bring a piece of fruit and a string cheese or a small container of peanut butter and an apple or just some sliced turkey and cheese.
Oh, another thing I do sometimes is run through McDonald's in the morning to get a coffee and pick up a $1 side salad to eat with my lunch.
I used to do a lot of soup in the microwavable cups in the soup aisle. I also did a lot of leftovers, especially things that reheat well like chili.

This ended up long, sorry.
I have a grand total of two options if I wanted to eat lunch out, and I don't like either one, so I bring my lunch every day. I try to avoid frozen meals and canned stuff, so I typically will make one batch of soup or a casserole a week and bring the leftovers to work that week. Sometimes I freeze them as well and take them later.
Some of the recipes I make that re-heat well:
Chicken and Sweet Potato Chili - One of my absolute faves.
Sherried Tomato Soup - Love this, too.
Enchilada Bake
There is a penne bake recipe I got off this board I make often as well with whole wheat pasta and ground turkey.
Regular old chili - I use a wick fowler's 2 alarm chili, and leave out the salt packet. I make it with ground turkey and beef broth instead of water.
Spaghetti Squash Lasagna - I'm making this tonight or tomorrow. I'll let you know how it goes.
I also will sometimes just bring in stuff for salads on Monday and eat that for lunch during the week. I'll bring in a big package of baby spinach, blue cheese, a cucumber, a few tomatoes, red bell peppers, red onions, etc. I'll bring grilled chicken if I have some as well. I keep salad dressing in the fridge at work (If you're looking for healthier dressing options, I love Lighthouse brand yogurt dressings) We have a kitchen at work, so I just chop up what I need for that day's salad. You can always bring things pre-chopped, too.
I eat leftovers a lot too...I just fix a meal with four servings and DH and I both take it to work the next day.
In the cooler weather, I make a big pot of soup, stew, or chili on Sunday or Monday and then take that during the week.
I often end up just eating random things for lunch that I keep in my mini-fridge in my classroom. Example of food I sometimes have on hand: hummus, crackers, cheese, baby carrots, fruits, granola, yogurt, freezer meals, chips and salsa, peanut butter, V8 juice, canned tuna.
Other ideas: wraps with meat/cheese and veggies or hummus and veggies, microwaveable soups and crackers, tuna/chicken salad on lettuce or w/crackers, grill some chicken breasts on the weekend and then eat them on salads throughout the week, pasta salad
LOL. No kidding, huh? I look at what they serve for lunch in our high school cafeteria and think to myself, no wonder there's a weight problem in America. There's simply no healthy options for the kids.
I also do leftovers much of the time, so basically I eat the same things as work as I would if I came home for lunch. I usually bring a serving of frozen vegetables, paired with a meat from a previous dinner and often rice or potatoes.
Taco stuff heats up well. I'll take cheese and lettuce in individual containers, then either make burritos there or mix everything together with tortilla chips in a container after I heat up the meat. Chili is an easy lunch, as are soups. On days we have no leftovers, pasta is quick and easy to make. I like the ravioli and tortellini you buy frozen.

Other teachers often smell my food and hover over it and act jealous
Today it was leftover roast beef in mushroom sauce over mashed potatoes. However, I occasionally get tired of leftovers and go to the nearby sandwich shop or bring a frozen dinner/can o' soup.

This seems like such a great idea! I need to get a vacuum thing so I can try that. It would def. get me eating more salad!
