It took me a minute to read through that, but I think it sounds pretty good. For meat, you have chicken, shrimp and whatever's in the calzones. For sides, you have sweet potatoes, fruit, grapes, and chips. Maybe add a veggie tray. The drinks sound like a good variety.
Chocolate-dipped pretzel rods aren't tropical, but they are popular, easy, and inexpensive.
ETA - What time is this? If it's at dinnertime for a large crowd, that might change my answer a little.

I think you need something more substantial than chicken and shrimp for a dinner time meal. I would add pulled pork sandwiches. You can make the pulled pork in a crockpot and its very easy. Serve it with some Hawaiian buns.
Everything else sounds great.
As long as you have enough quantity this looks like a good mix. Any vegetarians? If so you'll need something there.
What are your dad's cookies? I'd probably do something with macadamia nuts if that's not in the cookies
