I mentioned that I would be making this in the lunch ideas post, and was asked for a follow up.
It was really good! I didn't even notice the missing noodles. I modified it a bit, as I usually do. I added ground turkey, diced onions, and garlic to a regular jar of natural Ragu for the sauce. I also used 2% cottage cheese instead of ricotta since I had it on had. I doubled the recipe and used a large 9x13 pan. It made 8 large servings. I probably could have made 10 servings out of it instead. Obviously my changes changed the calorie count a bit, but probably not by much.
It was less firm than a typical lasagna, with more liquid in it. I think the liquid actually helps it be really good for leftovers. I've already eaten a serving or two as leftovers and it heats up well.
I've made a few things from skinny taste before, and it's kind of hit or miss. This is a hit, as well as the chicken rollatini I've mentioned before. Next up, I'm trying this.
