Pie or other dessert?

So, the day before Tday we are going to my family's (1.5 hrs).  Then heading straight from there to my ILs on Tday (another 1.5 hrs).  I've been put on pumpkin pie duty.  There will be 10 adults, 4 teenagers, and a 10 year old.  They said one pie, but that's just not going to cut it.  I need something that I can make the day before and doesn't need to be refrigerated. 

I was thinking a chocolate pie would fit the bill (and use the other half of the crust).  Apple cake also crossed my mind.  We'll be there for several days so I'm not opposed to doing all 3.  Then again I'm also making 12 dozen cookies and some other still undecided side for my family so that may be more than I want to deal with. 

Did I mention we'll also be putting our house on the market that week?

  • You crazy.

    Fruit crisp?  Easy to assemble wherever you arrive.  Carry the fruit whole, put the seasonings all in one baggy and put the granola-y topping in another baggy.

  • A crisp might be a good idea, but they won't eat pears.  These people didn't understand tortellini when I used it in a salad.  Seriously, grown people did not know what tortellini was.  Ina Garten's apple cranberry cake is also very good....

    (you know how I like to do a fruit and a chocolate so that was another consideration)

  • I've made this caramel apple cake recipe before - it's easy to make and it's been a hit every time I've made it. People always ask me for the recipe. It would serve quite a few people. If making it in advance, I would just skip putting the caramel topping on until right before serving. You can even use a jar of caramel ice cream topping instead of making the caramel topping in the recipe to make it even easier, I've done that before.
