DH called me at 6pm to let me know the dinner tonight was cancelled. Ok, I get it, everyone had a long day and the guest of honor was tired from jet lag. At least DH gave me a rain check for a date night - yay! It's probably for the best. DH had to go into work both days the past weekend, it's a busy week, and he's currently snoring on the couch while we wait for dinner to be ready.
My first thought - What about my rib-eye steak with bbq mushroom ragout, sauteed spinach deliciouness, and curried fries? What about my debating between trying a soup or enjoying the arugula salad with cinnamon poached pears, popcorn calamari, and balsamic syrup drizzle? What about the fancy creme brulee I was looking forward to trying?
My second thought - Shoot, WTH am I going to make for dinner? I had leftovers prepped for the housemaid and BabyD. But for all of us...
After a brief perusal of the fridge I decide to saute up some veggies, add some ground beef, add some cream of mushroom soup, to serve all thick over the leftover egg noodles. Things are coming together. Then I go to warm up the noodles and hit another snag. Nowhere near enough for three adults. All the noodles were pushed to the front of the container making it look full. Stood there with a blank look on my face for a few minutes then decided to pull out the box of cornbread muffin mix. I'm sure everything will taste just fine.
Just one of those moments where it's a cascading doh, doh, doh! with one little change of plans.

Unfortunately while there is delivery in this country, our housing area has limited options. Everything takes 45-60 minutes so sometimes it really is faster to cook. (especially when balancing DH's hungry tummy and DS's bedtime - fun, fun)
