Chili recipes?

Anyone have an awesome, never fail chili recipe?...crockpot preferred.

  • Mine is pretty basic and I would consider it no fail.

    1 package ground beef (i get the smaller size at Publix- 1lb ish)
    2 cans mild chili beans
    2 cans black beans
    1 can kidney beans (drained and rinsed)
    2 cans tomatoes with chilis (I use Publix brand, you can use rotel)
    1 tablespoon Mrs. Dash Chipotle seasoning
    1 package of chili seasoning

    Brown the beef in a hot skillet.  Add the chili seasoning and Mrs. Dash.  When it's brown dump it in the crock pot with all of the beans/tomatoes.

    If you want less beans and more tomatoes go for it.  I don't drain the black bean, chili beans, or tomatoes before hand.

    ETA: I try to grab the can of low sodium beans.  I can't really taste a difference and there is always a decent amount of salt in the chili seasoning.

  • This is another basic recipe that was my grandpa's and I love it. :) Not crockpot though, but still really easy. Makes a lot, so I usually halve it and still freeze some.

    3 lbs ground beef
    1 large onion, chopped
    55oz red kidney beans
    46 oz tomato juice
    28 oz crushed tomatoes
    12 oz tomato paste
    4 T chili powder
    salt and pepper to taste
    hot sauce to taste

    Brown ground beef and onion then drain. In large pot, combine everything else then add beef and onion. Bring to a boil. Simmer 2-3 hours.

    This is a crockpot chicken chili recipe I've used in the past with consistent success too.

    I don't cook the chicken first just because I'm lazy. I just trim it and then pull the breasts out once it's done and shred it into the chili. Read the reviews for more tips if you end up using this recipe.

  • Not crockpot but it doesn't take that long

    • Package of ground turkey
    • Packet of Publix Mild Chili Seasoning (but obviously can be modified to whatever spice level you like)
    • 1 can tomato sauce
    • 1 can dark red kidney beans (undrained)
    • 1 can black beans (drain and rinse or undrained)*
    • 1 can pinto beans (drain and rinse or undrained)*
    • 1 can whole kernel corn (drained)

    * Leaving all the beans undrained will make the chili more liquid-y.  I like it thicker, so I drain most of the beans. 

    Brown the ground turkey.  Add tomato sauce, chili seasoning and all the other stuff. Stir and cook until it's hot.  Serve with shredded cheese, sour cream, corn chips, whatever accompaniments you like :)

  • There is a recipe I found on allrecipes.com called Outlander chili.

    It's the best I've ever had and can be adapted for the crockpot easily.
