Thanksgiving Side Dishes - no eggs
I need an idea for an easy side dish for Thanksgiving. My brother and sister in-law are coming to have dinner with DH and I but she has an egg problem where she's not supposed to eat them or anything with eggs in it. I know she can have the turkey, stuffing, mashed potatoes and rolls without a problem but not the broccoli casserole and pumpkin pie that I am making.
Any ideas? She doesn't eat much with a wiggly 7 month old on her lap so it may not be a problem to begin with but I want her to be able to have options.

I would make just some plain veggies...steam or roast broccoli or green beans, sprinkled with some lemon or balsamic. Or maybe carrots...with some ginger and brown sugar. Quick, easy...
There are so many great egg free recipes! My favorites are the "upscale" versions of green bean casserole (there is a version on Parade.com that doesn't include the canned Campell's soup). Ina Garden also has a green bean recipe with shallots in Good Housekeeping.
Ryan Bakes sweet potato recipe is delicious and has no egg (but I think marshmallows have egg, so you have to leave those out).
Sweet Potato Casserole
Ingredients:
2 1/2 pounds sweet potatoes, peeled and cut into 1-inch cubes
3/4 cup packed brown sugar
1/4 cup butter, softened
1 1/2 tsp. salt
1/2 tsp. vanilla extract
1/2 cup finely chopped pecans, divided
Cooking spray
2 cups miniature marshmallows
Instructions:
Preheat oven to 375 degrees F.
Place the sweet potatoes in a pot and cover with cold water. Bring to a boil. Reduce heat, and simmer for 15 minutes or until very tender. Drain and cool slightly.
Place potatoes in a large bowl. Add sugar and the next 3 ingredients (through vanilla). Mash sweet potatoes with a potato masher. Fold in 1/4 cup of pecans. Scrape potato mixture into an even layer into an 11x7-inch baking dish coated with cooking spray. Sprinkle with remaining 1/4 cup of pecans; top with marshmallows. Bake at 375 for 25 minutes or until golden.

Also, I never make brussels sprouts b/c people don't seem to like them (except me), but I've always wanted to make brussels sprouts with pecans or hazlenuts.
